Onion, mushroom and Green pepper soup (Vegan)

  • 1 large onion
  • 175g/6oz dark flat mushrooms
  • 1 large green pepper
  • 4 tablespoons oil
  • 1 clove garlic
  • 1 tablespoon flour
  • 900 ml (1.1/2 pts veg stock)
  • marjoram 2 tablespoons fresh or 1 tablespoon dried
Finely chop the onions, mushrooms and pepper.  Heat the oil in the saucepan stir in the prepared vegetables plus the garlic, cover and cook gently for 10 mins.
Stir in the flour and stock, add the marjoram and simmer uncovered for 15 mins,
If you can buy fresh Marjoram, it tastes better, and its possible to freeze what you don’t use, in ice cubes trays topped up with water which you can then use later.  You can make your own stock, and there is a recipe in this book, which I will try soon and put the recipe online.
